Ingredients
  

Crust
  • 1 cup unsalted butter softened
  • 1/2 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
Filling
  • 2 cups fresh or frozen cherries pitted and halved
  • 1/2 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • 1/2 teaspoon almond extract optional

Method
 

Prepare the Crust
  1. Preheat the oven to 350°F (175°C). Grease the baking pan.
  2. In a mixing bowl, cream together the softened butter and sugar until light and fluffy.
  3. Add the flour and salt, mixing until just combined. Press two-thirds of the mixture into the bottom of the prepared baking pan.
Make the Filling
  1. In another bowl, combine the cherries, sugar, cornstarch, lemon juice, and almond extract. Stir until well mixed.
  2. Spread the cherry mixture evenly over the crust in the baking pan.
Bake the Bars
  1. Crumble the remaining crust mixture over the cherry filling.
  2. Bake in the preheated oven for 30 minutes or until the top is golden brown.
  3. Allow to cool completely before cutting into bars.

Notes
