Ingredients
  

Burger Patties
  • 1 can black beans drained and rinsed
  • 1 cup cooked quinoa
  • 1 small onion finely chopped
  • 1 clove garlic minced
  • 1 cup carrots grated
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 cup breadcrumbs for binding
  • 1 teaspoon salt
  • 1 teaspoon pepper
Toppings
  • 4 slices cheese optional
  • 4 buns burger buns
  • 1 cup lettuce shredded
  • 1 tomato sliced
  • 1/2 cup pickles sliced

Method
 

Prepare the Mixture
  1. In a mixing bowl, mash the black beans until mostly smooth. Add cooked quinoa, onion, garlic, carrots, cumin, paprika, salt, and pepper. Mix well.
  2. Stir in breadcrumbs until the mixture holds together. If too wet, add more breadcrumbs.
Form Patties
  1. Shape the mixture into 4 equal patties.
Cook the Patties
  1. Heat a skillet over medium heat and add a little oil. Cook the patties for about 5-7 minutes on each side until golden brown.
  2. If using cheese, place a slice on each patty during the last minute of cooking to melt.
Assemble the Burgers
  1. Place each patty on a bun and top with lettuce, tomato, and pickles. Serve immediately.
