Ingredients
  

Noodles
  • 8 oz rice noodles or any preferred noodles
Peanut Sauce
  • 1/2 cup creamy peanut butter
  • 1/4 cup soy sauce or tamari for gluten-free
  • 2 tbsp honey or maple syrup for vegan
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 clove garlic minced
  • 1 inch ginger grated
  • 2 tbsp water to thin the sauce
Toppings
  • 1/4 cup chopped green onions
  • 1/4 cup chopped cilantro
  • 1/4 cup crushed peanuts
  • 1 each lime cut into wedges

Method
 

Prepare Noodles
  1. Cook the rice noodles according to package instructions until al dente. Drain and rinse under cold water.
Make Peanut Sauce
  1. In a mixing bowl, whisk together peanut butter, soy sauce, honey, rice vinegar, sesame oil, minced garlic, grated ginger, and water until smooth.
Combine
  1. In a large pot, combine the cooked noodles and peanut sauce. Toss until the noodles are evenly coated.
Serve
  1. Divide the noodles into bowls and top with chopped green onions, cilantro, crushed peanuts, and lime wedges.
