Prepare the Marinade
- In a blender, combine achiote paste, orange juice, pineapple juice, garlic, cumin, oregano, salt, and black pepper. Blend until smooth.
Marinate the Pork
- Place the sliced pork shoulder in a bowl and pour the marinade over it. Mix well to coat the pork and let it marinate for at least 1 hour, preferably overnight in the refrigerator.
Cook the Pork
- Preheat the grill to medium-high heat. Grill the marinated pork slices for about 5-7 minutes on each side until cooked through and slightly charred.
Assemble the Tacos
- Warm the corn tortillas on the grill for about 30 seconds on each side. Remove the pork from the grill, chop it into bite-sized pieces, and place it on the tortillas.
- Top with diced pineapple, onion, and cilantro. Serve with lime wedges on the side.
