Ingredients
  

  • 8 oz Penne pasta
  • 1 lb Ground beef
  • 1 cup Diced tomatoes
  • 1 cup Corn
  • 1 cup Black beans
  • 1 cup Bell pepper
  • 1 cup Onion
  • 1 packet Taco seasoning
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 1 tsp Chili powder
  • 1 cup Shredded cheddar cheese For serving
  • 1 cup Sour cream For serving
  • 1 cup Chopped cilantro For serving

Method
 

  1. Cook the penne pasta according to package instructions; drain.
  2. In a large skillet, brown the ground beef over medium heat until fully cooked; drain excess fat.
  3. Add the diced tomatoes, corn, black beans, bell pepper, onion, taco seasoning, garlic powder, onion powder, and chili powder to the skillet; stir to combine.
  4. Cook for about 5-10 minutes, until the vegetables are tender.
  5. Stir in the cooked pasta until well combined.
  6. Serve topped with shredded cheddar cheese, sour cream, and chopped cilantro.
