Tamale Crust
  • 1 cup fine cornmeal
  • 2 cups low-sodium vegetable broth
Filling
  • 1 can (15 oz) black beans rinsed
  • 1 cup mixed bell peppers chopped
  • 1 medium onion chopped
  • 1 can (14.5 oz) diced tomatoes fire-roasted preferred
Toppings
  • 1 cup shredded cheese cheddar and Monterey Jack mix
  • ½ cup sour cream or Greek yogurt

Method
 

Preparation
  1. Preheat oven to 375°F (190°C). Prepare a baking dish with nonstick spray.
  2. In a bowl, whisk together cornmeal and vegetable broth until smooth.
  3. Sauté onions and bell peppers in olive oil over medium heat until soft; about 5 minutes.
  4. Mix in black beans and diced tomatoes; cook until heated through.
  5. Layer half of the cornmeal mixture in the baking dish, followed by the veggie mixture, then top with remaining cornmeal mix and cheese.
  6. Bake for 30-35 minutes until golden brown on top.
