Ingredients
  

Casserole Base
  • 1 cup uncooked rice white or brown
  • 1 lb ground beef or turkey
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 can diced tomatoes 14.5 oz
  • 1 cup bell peppers chopped (mixed colors)
  • 1 cup beef broth
  • 1 tbsp Italian seasoning
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 cup shredded cheese cheddar or mozzarella

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a skillet over medium heat, brown the ground beef with the chopped onion and minced garlic until fully cooked.
  3. Stir in the diced tomatoes, chopped bell peppers, beef broth, uncooked rice, Italian seasoning, salt, and black pepper.
  4. Bring the mixture to a boil, then reduce heat and simmer for 5 minutes.
Baking
  1. Transfer the mixture to a casserole dish and cover with aluminum foil.
  2. Bake in the preheated oven for 30 minutes.
  3. Remove the foil, sprinkle the shredded cheese on top, and bake uncovered for an additional 10-15 minutes until the cheese is melted and bubbly.
  4. Let it cool for a few minutes before serving.
