- Chop the chicken into bite-sized pieces and mince the garlic and ginger.
- In a bowl, whisk together soy sauce, pineapple juice, brown sugar, minced garlic, and ginger until combined.
- Add the chicken to the marinade; cover and let soak for at least 30 minutes or overnight for deeper flavor.
- Heat vegetable oil in a skillet over medium-high heat. Cook the marinated chicken (discard excess marinade) until golden brown and cooked through (6-8 minutes).
- Pour any remaining marinade into the skillet and bring to a gentle boil. Cook for 3-5 minutes until thickened.
