Ingredients
  

Base Ingredients
  • 2 tablespoons butter
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can diced tomatoes 14.5 oz
  • 1 cup chicken broth
  • 1 tablespoon all-purpose flour
Seasoning
  • 1 teaspoon sugar to balance acidity
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper freshly ground
  • 1/2 teaspoon red pepper flakes optional for heat
  • 1 tablespoon fresh basil, chopped for garnish

Method
 

Prepare the Base
  1. In a saucepan, melt the butter over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  2. Stir in the minced garlic and cook for an additional minute until fragrant.
Make the Gravy
  1. Sprinkle the flour over the onion and garlic mixture, stirring constantly for about 1 minute to create a roux.
  2. Add the diced tomatoes (with juice) and chicken broth, stirring to combine. Bring to a simmer.
  3. Add sugar, salt, black pepper, and red pepper flakes. Simmer for 10-15 minutes until thickened, stirring occasionally.
Serve
  1. Remove from heat and garnish with fresh basil. Serve over biscuits or rice.
