Prepare the Cookie Dough
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.

Make the Cheesecake Filling
- In a separate bowl, beat the softened cream cheese with powdered sugar and vanilla extract until smooth.
- Gently fold in the diced strawberries.
Assemble and Bake
- Using a cookie scoop, drop a spoonful of cookie dough onto the prepared baking sheet.
- Make a small indentation in the center of each cookie and fill it with the cheesecake mixture.
- Bake for 10-12 minutes, or until the edges are lightly golden. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
