Ingredients
  

Beef and Vegetables
  • 2 pounds beef chuck roast cut into 1-inch cubes
  • 4 medium carrots sliced
  • 3 medium potatoes peeled and cubed
  • 1 large onion chopped
  • 3 cloves garlic minced
Liquids and Seasonings
  • 4 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste

Method
 

Preparation
  1. In a large bowl, combine the beef, carrots, potatoes, onion, and garlic.
  2. Add the beef broth, Worcestershire sauce, thyme, salt, and pepper. Stir to combine.
Cooking
  1. Transfer the mixture to the slow cooker.
  2. Cover and cook on low for 8 hours or until the beef is tender.
Serving
  1. Serve hot, garnished with fresh parsley if desired.

Notes

For a thicker stew, you can mix 2 tablespoons of cornstarch with 2 tablespoons of water and stir it into the stew during the last 30 minutes of cooking.
