Method
 

Main Cooking Process
  1. Preheat the oven to 375°F (190°C).
  2. In a saucepan, melt 4 tablespoons of unsalted butter over medium heat. Add the flour and whisk until smooth.
  3. Gradually add the milk and heavy cream to the butter-flour mixture, whisking until thickened.
  4. Stir in the sharp cheddar cheese, Gruyère cheese, salt, black pepper, and nutmeg. Mix until the cheeses are melted and the sauce is smooth.
  5. Layer half of the sliced potatoes in a baking dish. Pour half of the cheese sauce over the potatoes. Repeat with the remaining potatoes and sauce.
  6. Top with panko breadcrumbs mixed with 2 tablespoons of melted butter and shredded Parmesan cheese.
  7. Bake in the oven for 60 minutes or until the potatoes are tender and the top is golden brown.
