Ingredients
  

Muffin Batter
  • 1 cup pumpkin puree canned or homemade
  • 1 cup sugar granulated
  • 1/2 cup brown sugar packed
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
Streusel Topping
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar packed
  • 1/4 cup butter cold and cubed
  • 1 teaspoon cinnamon

Method
 

Prepare Muffin Batter
  1. Preheat the oven to 350°F (175°C) and grease a muffin tin.
  2. In a large bowl, whisk together pumpkin puree, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract until smooth.
  3. In another bowl, mix together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
Make Streusel Topping
  1. In a small bowl, combine flour, brown sugar, and cinnamon.
  2. Cut in the cold butter until the mixture resembles coarse crumbs.
Bake Muffins
  1. Scoop the muffin batter into the prepared muffin tin, filling each cup about 2/3 full.
  2. Sprinkle the streusel topping evenly over each muffin.
  3. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  4. Allow muffins to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
