Ingredients
  

Cookie Dough
  • 1 cup peanut butter creamy or chunky
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
Topping
  • 1/2 cup chocolate chips for melting
  • 4 pieces mini peanut butter cups for topping

Method
 

Prepare the Dough
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine peanut butter, granulated sugar, brown sugar, egg, and vanilla extract. Mix until smooth.
  3. In another bowl, whisk together flour, baking soda, and salt. Gradually add to the peanut butter mixture until combined.
Bake the Cookies
  1. Using a cookie scoop, drop dough onto a baking sheet lined with parchment paper.
  2. Bake for 8-10 minutes or until edges are lightly golden.
  3. Remove from oven and immediately press a mini peanut butter cup into the center of each cookie.
Finish and Serve
  1. In a microwave-safe bowl, melt chocolate chips in 30-second intervals, stirring until smooth.
  2. Drizzle melted chocolate over the cookies and let cool before serving.
