Ingredients
  

Pasta
  • 12 oz Fusilli or Penne pasta or any pasta of choice
Vegetables
  • 1 cup Zucchini sliced
  • 1 cup Bell peppers sliced
  • 1 cup Cherry tomatoes halved
  • 1 cup Carrots sliced
  • 1 cup Broccoli florets
Sauce
  • 3 tbsp Olive oil extra virgin
  • 2 cloves Garlic minced
  • 1 tsp Italian seasoning
  • 1 tsp Salt to taste
  • 1/2 tsp Black pepper to taste
  • 1/4 cup Parmesan cheese grated, for serving

Method
 

Cook the Pasta
  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
Sauté the Vegetables
  1. In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  2. Add the zucchini, bell peppers, carrots, and broccoli. Sauté for about 5-7 minutes until the vegetables are tender but still crisp.
  3. Stir in the cherry tomatoes and Italian seasoning, cooking for an additional 2 minutes.
Combine and Serve
  1. Add the cooked pasta to the skillet with the vegetables. Toss to combine and season with salt and black pepper.
  2. Serve hot, topped with grated Parmesan cheese.
