Ingredients
  

Sponge Cake
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 1/2 cup unsalted butter melted
  • 2 large eggs
  • 1 tsp vanilla extract
Custard
  • 2 cups milk
  • 1/4 cup granulated sugar
  • 3 tbsp cornstarch
  • 1/4 tsp salt
  • 2 large egg yolks
  • 1 tsp vanilla extract
Fruit Topping
  • 1 cup mixed berries strawberries, blueberries, raspberries
Whipped Cream
  • 1 cup heavy cream
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract

Method
 

Prepare Sponge Cake
  1. Preheat the oven to 350°F (175°C). In a mixing bowl, combine flour, sugar, and baking powder. Add melted butter, eggs, and vanilla, and mix until smooth.
  2. Pour the batter into a greased baking pan and bake for 25-30 minutes or until a toothpick comes out clean. Let cool.
Make Custard
  1. In a saucepan, whisk together milk, sugar, cornstarch, and salt. Cook over medium heat, stirring constantly until thickened.
  2. Remove from heat and whisk in egg yolks and vanilla. Let cool.
Prepare Whipped Cream
  1. In a mixing bowl, beat heavy cream, powdered sugar, and vanilla until soft peaks form.
Assemble Trifles
  1. In trifle cups, layer pieces of sponge cake, custard, mixed berries, and whipped cream. Repeat layers until cups are filled.
  2. Chill in the refrigerator for at least 1 hour before serving.
