Ingredients
  

Chicken
  • 4 pieces boneless, skinless chicken breasts
  • 1 tablespoon olive oil for grilling
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Corn Topping
  • 2 cups corn kernels fresh or frozen
  • 1/2 cup mayonnaise for creaminess
  • 1/2 cup cotija cheese crumbled
  • 1/4 cup cilantro chopped
  • 1 lime juiced
  • 1/4 teaspoon smoked paprika

Method
 

Prepare the Chicken
  1. Preheat the grill to medium-high heat.
  2. In a mixing bowl, combine olive oil, chili powder, cumin, garlic powder, salt, and black pepper.
  3. Rub the spice mixture over the chicken breasts.
  4. Grill the chicken for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
Make the Corn Topping
  1. In a separate bowl, mix together the corn, mayonnaise, cotija cheese, cilantro, lime juice, and smoked paprika.
  2. Season with additional salt and pepper to taste.
Assemble the Dish
  1. Once the chicken is cooked, remove it from the grill and let it rest for a few minutes.
  2. Slice the chicken and top with the corn mixture.
  3. Serve immediately, garnished with extra cilantro if desired.
