Mexican Lasagna with Tortillas

A delicious twist on traditional lasagna, using tortillas and a flavorful blend of Mexican ingredients.

Ingredients
  

Tortilla Layers
  • 8 pieces corn tortillas
Meat Mixture
  • 1 lb ground beef or ground turkey
  • 1 cup onion, chopped
  • 2 cloves garlic, minced
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup salsa
  • 1 packet taco seasoning
Cheese Mixture
  • 2 cups cheddar cheese, shredded
  • 1 cup cream cheese, softened
  • 1 cup sour cream

Method
 

Prepare the Meat Mixture
  1. In a skillet over medium heat, cook the ground beef with chopped onion and minced garlic until browned. Drain excess fat.
  2. Stir in black beans, corn, salsa, and taco seasoning. Cook for an additional 5 minutes.
Prepare the Cheese Mixture
  1. In a mixing bowl, combine softened cream cheese, sour cream, and 1 cup of shredded cheddar cheese. Mix until smooth.
Assemble the Lasagna
  1. Preheat the oven to 350°F (175°C).
  2. Spread a thin layer of the meat mixture on the bottom of a 9x13 inch baking dish.
  3. Layer 4 tortillas over the meat mixture, then spread half of the cheese mixture on top.
  4. Repeat the layers with the remaining meat mixture, tortillas, and cheese mixture. Top with remaining cheddar cheese.
Bake
  1. Cover the dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes until cheese is bubbly and golden.
Serve
  1. Let the lasagna cool for a few minutes before slicing. Serve with additional salsa or sour cream if desired.
