Ingredients
  

Chicken and Broth
  • 1 lb boneless, skinless chicken breasts cut into bite-sized pieces
  • 4 cups chicken broth low sodium
  • 1 cup water
  • 1 tsp salt to taste
  • 1 tsp black pepper to taste
Vegetables
  • 1 cup carrots diced
  • 1 cup celery diced
  • 1 cup onion diced
  • 2 cloves garlic minced
Creamy Base
  • 1 cup heavy cream
  • 1 tbsp cornstarch mixed with 2 tbsp water
  • 1 tbsp fresh parsley chopped for garnish

Method
 

Prepare the Chicken
  1. In a large pot, add the chicken, chicken broth, water, salt, and pepper. Bring to a boil over medium-high heat.
  2. Reduce heat and simmer for about 15 minutes, or until the chicken is cooked through.
Add Vegetables
  1. Add the carrots, celery, onion, and garlic to the pot. Cook for an additional 10 minutes, until the vegetables are tender.
Make it Creamy
  1. Stir in the heavy cream and the cornstarch mixture. Cook for another 5 minutes, stirring frequently until the soup thickens.
  2. Adjust seasoning with more salt and pepper if needed.
Serve
  1. Ladle the soup into bowls and garnish with fresh parsley before serving.
