Ingredients
  

Chicken
  • 4 pieces boneless, skinless chicken breasts
Sauce
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup sun-dried tomatoes chopped
  • 2 cups fresh spinach packed
  • 1 cup parmesan cheese grated
  • 3 cloves garlic minced
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Method
 

Prepare the Chicken
  1. Preheat the oven to 375°F (190°C). Season the chicken breasts with salt and pepper.
  2. In a skillet over medium heat, sear the chicken breasts for 3-4 minutes on each side until golden brown. Remove from skillet and set aside.
Make the Sauce
  1. In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
  2. Add sun-dried tomatoes, chicken broth, and heavy cream. Stir to combine and bring to a simmer.
  3. Add spinach and Italian seasoning, cooking until the spinach wilts. Stir in grated parmesan cheese until melted and smooth.
Bake the Dish
  1. Place the seared chicken breasts in a baking dish and pour the sauce over the top.
  2. Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
Serve
  1. Remove from oven and let rest for a few minutes before serving. Enjoy your Marry Me Chicken with pasta or rice!
