Ingredients
  

Pasta
  • 12 oz Pasta (spaghetti or fettuccine) Use your favorite type of pasta.
Sauce
  • 1 cup Ricotta cheese Fresh ricotta is best.
  • 1 medium Lemon (zested and juiced) Use fresh lemon for best flavor.
  • 1/2 cup Parmesan cheese (grated) Plus extra for serving.
  • 2 tbsp Olive oil Extra virgin recommended.
  • 1 tsp Salt Adjust to taste.
  • 1/2 tsp Black pepper Freshly ground.
  • 1/4 cup Fresh basil (chopped) For garnish.

Method
 

Cook Pasta
  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente.
Prepare Sauce
  1. In a mixing bowl, combine ricotta cheese, lemon zest, lemon juice, Parmesan cheese, olive oil, salt, and black pepper. Mix until smooth.
Combine
  1. Drain the pasta and reserve a cup of pasta water. Add the pasta to the bowl with the ricotta mixture. Toss to combine, adding reserved pasta water as needed to reach desired creaminess.
Serve
  1. Serve immediately, garnished with fresh basil and extra Parmesan cheese.
