Homemade Peach Cobbler

Ingredients
  

Filling
  • 4 cups fresh peaches, sliced or canned peaches, drained
  • 1 cup granulated sugar adjust based on sweetness of peaches
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon
  • 1 tablespoon cornstarch
Topping
  • 1 cup all-purpose flour
  • 1 cup milk
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt

Method
 

Prepare the Filling
  1. Preheat the oven to 350°F (175°C). In a mixing bowl, combine sliced peaches, sugar, lemon juice, cinnamon, and cornstarch. Mix well and set aside.
Make the Topping
  1. In another bowl, whisk together flour, sugar, baking powder, and salt. Stir in milk and melted butter until just combined.
Assemble and Bake
  1. Pour the peach mixture into a greased baking dish. Spoon the topping mixture over the peaches evenly.
  2. Bake in the preheated oven for 30-40 minutes, or until the topping is golden brown and a toothpick comes out clean.
Serve
  1. Let cool slightly before serving. Enjoy warm, optionally with vanilla ice cream.

Notes

For best results, use ripe peaches in season. Can be served with whipped cream or ice cream.
