Ingredients
  

Dry Ingredients
  • 1 cup whole wheat flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt
Wet Ingredients
  • 1 cup pumpkin puree canned or homemade
  • 1/2 cup honey
  • 1/4 cup unsweetened applesauce
  • 2 large eggs
  • 1 tsp vanilla extract
Optional Add-ins
  • 1/2 cup chocolate chips optional
  • 1/2 cup walnuts chopped, optional

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a mixing bowl, whisk together all the dry ingredients.
  3. In another bowl, mix the wet ingredients until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  5. If using, fold in chocolate chips or walnuts.
Baking
  1. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  2. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  3. Allow muffins to cool in the tin for 5 minutes before transferring to a wire rack to cool completely.

Notes

These muffins can be stored in an airtight container for up to a week. They also freeze well for longer storage.
