Ingredients
  

Chicken and Vegetable Stir-Fry
  • 1 lb Boneless, Skinless Chicken Breast Cut into bite-sized pieces
  • 2 cups Mixed Vegetables Broccoli, bell peppers, and carrots
  • 3 tablespoons Soy Sauce Low sodium
  • 2 tablespoons Olive Oil For cooking
  • 1 teaspoon Garlic Minced
  • 1 teaspoon Ginger Minced
Quinoa and Black Bean Chili
  • 1 cup Quinoa Rinsed
  • 2 cans Black Beans Drained and rinsed
  • 1 can Diced Tomatoes With juice
  • 1 cup Vegetable Broth
  • 1 tablespoon Chili Powder
  • 1 teaspoon Cumin
  • 1 cup Corn Frozen or canned
Sweet Potato and Chickpea Curry
  • 2 medium Sweet Potatoes Peeled and diced
  • 1 can Chickpeas Drained and rinsed
  • 1 can Coconut Milk
  • 2 tablespoons Curry Powder
  • 1 cup Spinach Fresh or frozen
  • 1 tablespoon Olive Oil For cooking

Method
 

Chicken and Vegetable Stir-Fry
  1. Heat olive oil in a skillet over medium heat. Add chicken and cook until browned and cooked through.
  2. Add garlic and ginger, sauté for 1 minute.
  3. Add mixed vegetables and soy sauce, stir-fry for 5-7 minutes until vegetables are tender.
  4. Let cool, then portion into freezer bags and freeze.
Quinoa and Black Bean Chili
  1. In a large pot, combine quinoa, black beans, diced tomatoes, vegetable broth, chili powder, and cumin.
  2. Bring to a boil, then reduce heat and simmer for 20-25 minutes until quinoa is cooked.
  3. Stir in corn and let cool before portioning into freezer bags.
Sweet Potato and Chickpea Curry
  1. In a pot, heat olive oil over medium heat. Add sweet potatoes and cook for 5-7 minutes.
  2. Stir in chickpeas, coconut milk, and curry powder. Simmer for 20 minutes until sweet potatoes are tender.
  3. Add spinach and cook until wilted. Let cool and portion into freezer bags.
