Ingredients
  

Chicken and Vegetable Stir-Fry
  • 1 lb boneless chicken breast cut into bite-sized pieces
  • 2 cups mixed vegetables frozen or fresh
  • 2 tbsp soy sauce low sodium
  • 1 tbsp olive oil
  • 1 tsp garlic minced
  • 1 tsp ginger minced
Quinoa and Black Bean Bowl
  • 1 cup quinoa rinsed
  • 2 cups vegetable broth
  • 1 can black beans drained and rinsed
  • 1 cup corn frozen or canned
  • 1 tsp cumin
  • 1 tsp lime juice
Vegetable Soup
  • 1 tbsp olive oil
  • 1 onion chopped
  • 2 carrots sliced
  • 2 celery stalks sliced
  • 4 cups vegetable broth
  • 2 cups spinach fresh or frozen
  • 1 can diced tomatoes
  • 1 tsp thyme

Method
 

Chicken and Vegetable Stir-Fry
  1. Heat olive oil in a skillet over medium heat. Add chicken and cook until browned.
  2. Add garlic and ginger, sauté for 1 minute.
  3. Stir in mixed vegetables and soy sauce, cook until vegetables are tender.
Quinoa and Black Bean Bowl
  1. In a pot, combine quinoa and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes.
  2. Stir in black beans, corn, cumin, and lime juice. Cook for an additional 5 minutes.
Vegetable Soup
  1. In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery; sauté until softened.
  2. Add vegetable broth, diced tomatoes, and thyme. Bring to a boil, then reduce heat and simmer for 20 minutes.
  3. Stir in spinach and cook until wilted.
