Salad Ingredients
  • 2 cups kale stems removed, chopped
  • 1 cup butternut squash peeled and cubed
  • 1 cup quinoa cooked
  • 1/2 cup dried cranberries
  • 1/2 cup feta cheese crumbled
  • 1/4 cup pumpkin seeds toasted
Dressing
  • 3 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon honey
  • 1 teaspoon Dijon mustard

Method
 

Prepare the Squash
  1. Preheat the oven to 400°F (200°C). Toss the cubed butternut squash with olive oil, salt, and pepper. Spread on a baking sheet and roast for 25 minutes or until tender.
Cook Quinoa
  1. While the squash is roasting, cook the quinoa according to package instructions. Set aside to cool.
Make the Dressing
  1. In a small bowl, whisk together olive oil, apple cider vinegar, honey, Dijon mustard, salt, and pepper until well combined.
Assemble the Salad
  1. In a large mixing bowl, combine the kale, roasted squash, cooked quinoa, dried cranberries, feta cheese, and pumpkin seeds. Drizzle with the dressing and toss to combine.
