Ingredients
  

Salad Base
  • 4 cups mixed greens such as spinach, arugula, and romaine
  • 1 cup pineapple chunks fresh or canned
  • 1 cup mandarin oranges canned or fresh
  • 1 cup cherry tomatoes halved
  • 1/2 cup red bell pepper diced
  • 1/4 cup red onion thinly sliced
Dressing
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey or agave syrup
  • 1 teaspoon soy sauce
  • 1/2 teaspoon ginger freshly grated
  • 1 pinch salt
  • 1 pinch black pepper

Method
 

Prepare the Salad
  1. In a large mixing bowl, combine the mixed greens, pineapple chunks, mandarin oranges, cherry tomatoes, red bell pepper, and red onion.
Make the Dressing
  1. In a separate bowl, whisk together the olive oil, apple cider vinegar, honey, soy sauce, ginger, salt, and black pepper until well combined.
Combine and Serve
  1. Drizzle the dressing over the salad and toss gently to combine. Serve immediately.
