Ingredients
  

Vegetables
  • 2 cups cucumbers diced
  • 1 cup cherry tomatoes halved
  • 1 small red onion thinly sliced
Cheese
  • 1 cup feta cheese crumbled
Dressing
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice freshly squeezed
  • 1 teaspoon dried oregano
  • to taste salt
  • to taste black pepper

Method
 

Preparation
  1. In a mixing bowl, combine the diced cucumbers, halved cherry tomatoes, and sliced red onion.
  2. Add the crumbled feta cheese to the bowl.
  3. In a small bowl, whisk together the olive oil, lemon juice, dried oregano, salt, and black pepper.
  4. Pour the dressing over the salad and toss gently to combine all ingredients.
  5. Serve immediately or chill in the refrigerator for 30 minutes before serving.
