  • 1/3 cup 80ml pure maple syrup (or golden honey)
  • 1/4 cup 60ml heavy whipping cream
  • 1 tbsp pure vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/2 tsp fine sea salt
  • 3 cups 340g raw pecan halves (roughly chopped, plus extra whole halves for decorating)
  • 1.5 tsp coarse flaky Maldon sea salt for finishing

Step-by-Step Baking Method
  1. Preheat your oven to 350°F (175°C). Line a 9x13-inch metal baking pan with parchment paper, leaving an overhang on the two longer sides to create "handles" for effortless removal later.
  2. Prepare the shortbread crust: In a large bowl or food processor, combine flour, granulated sugar, light brown sugar, and fine sea salt. Add cold cubed butter and vanilla extract. Pulse or cut with a pastry blender until pea-sized crumbs form and dough holds together when pressed.
  3. Press the crumbly shortbread dough evenly into the bottom of the prepared 9x13 pan into a firm, compact layer using the bottom of a flat measuring cup.
