Ingredients
  

Chicken
  • 4 pieces chicken thighs bone-in, skin-on
  • 4 pieces chicken drumsticks bone-in, skin-on
Marinade
  • 2 cups buttermilk for marinating
  • 1 tablespoon hot sauce optional
  • 1 teaspoon salt
  • 1 teaspoon black pepper
Breading
  • 2 cups all-purpose flour
  • 1 tablespoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon cayenne pepper optional for heat
Frying
  • 4 cups vegetable oil for frying

Method
 

Marinate Chicken
  1. In a mixing bowl, combine buttermilk, hot sauce, salt, and black pepper. Add chicken pieces, ensuring they are fully submerged. Cover and refrigerate for at least 2 hours or overnight.
Prepare Breading
  1. In a separate bowl, mix together flour, paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper.
Bread Chicken
  1. Remove chicken from the marinade, allowing excess to drip off. Dredge each piece in the flour mixture, pressing to adhere. Shake off excess flour.
Fry Chicken
  1. In a deep fryer, heat vegetable oil to 350°F (175°C). Fry chicken pieces in batches, without overcrowding, for about 12-15 minutes or until golden brown and internal temperature reaches 165°F (75°C).
Drain and Serve
  1. Remove fried chicken and place on paper towels to drain excess oil. Serve hot.
