Ingredients
  

Chicken
  • 4 pieces chicken thighs bone-in, skin-on
  • 4 pieces chicken drumsticks bone-in, skin-on
Marinade
  • 2 cups buttermilk for marinating chicken
  • 1 tablespoon hot sauce optional for spice
  • 1 teaspoon salt
  • 1 teaspoon black pepper
Breading
  • 2 cups all-purpose flour
  • 1 tablespoon paprika for color and flavor
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
Frying
  • 4 cups vegetable oil for frying

Method
 

Marinate the Chicken
  1. In a large mixing bowl, combine buttermilk, hot sauce, salt, and black pepper. Add the chicken pieces, ensuring they are fully submerged. Cover and refrigerate for at least 2 hours, preferably overnight.
Prepare the Breading
  1. In another bowl, mix together flour, paprika, garlic powder, onion powder, salt, and black pepper.
Bread the Chicken
  1. Remove chicken from the marinade, allowing excess to drip off. Dredge each piece in the flour mixture, pressing lightly to adhere. Shake off excess flour.
Fry the Chicken
  1. In a cast iron skillet, heat vegetable oil over medium-high heat until it reaches 350°F (175°C). Carefully add the chicken pieces, frying in batches if necessary to avoid overcrowding. Fry for about 15-18 minutes, or until golden brown and cooked through, reaching an internal temperature of 165°F (75°C).
Drain and Serve
  1. Remove chicken from the skillet and place on a cooling rack to drain excess oil. Let rest for a few minutes before serving.

Notes

For extra crispy chicken, double-dip the chicken in the buttermilk and flour mixture before frying.
