Ingredients
  

Focaccia Bread
  • 4 cups All-purpose flour
  • 1 cup Warm water About 110°F
  • 2 teaspoons Active dry yeast
  • 2 teaspoons Salt
  • 1/4 cup Olive oil Plus extra for drizzling
Sandwich Fillings
  • 8 slices Fresh mozzarella cheese
  • 1 cup Sliced tomatoes Preferably heirloom
  • 1 cup Fresh basil leaves
  • 1/2 cup Pesto sauce For spreading

Method
 

Prepare the Focaccia
  1. In a mixing bowl, combine warm water and yeast. Let it sit for 5 minutes until frothy.
  2. Add flour, salt, and olive oil to the yeast mixture. Mix until a dough forms.
  3. Knead the dough on a floured surface for about 10 minutes until smooth.
  4. Place the dough in a greased bowl, cover, and let it rise in a warm place for 1 hour or until doubled in size.
  5. Preheat the oven to 425°F (220°C).
  6. Once risen, punch down the dough and spread it onto a greased baking sheet. Dimple the surface with your fingers.
  7. Drizzle with olive oil and sprinkle with salt. Bake for 20 minutes until golden brown.
Assemble the Sandwich
  1. Once the focaccia is cooled, slice it horizontally.
  2. Spread pesto sauce on the bottom half of the focaccia.
  3. Layer with mozzarella slices, tomatoes, and basil leaves.
  4. Top with the other half of the focaccia and press gently.
  5. Cut into individual sandwiches and serve.
