Pumpkin Spice Muffins
  • 1 cup all-purpose flour
  • 1 cup pumpkin puree
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
Apple Crisp
  • 4 cups sliced apples preferably Granny Smith
  • 1 cup oats
  • 1/2 cup brown sugar
  • 1/2 cup all-purpose flour
  • 1/2 cup butter melted
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt

Method
 

Pumpkin Spice Muffins
  1. Preheat the oven to 350°F (175°C). Grease a muffin tin.
  2. In a mixing bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, mix the pumpkin puree, sugars, vegetable oil, and eggs until smooth.
  4. Combine the wet and dry ingredients, stirring until just combined.
  5. Fill the muffin tin with the batter and bake for 20-25 minutes or until a toothpick comes out clean.
Apple Crisp
  1. Preheat the oven to 350°F (175°C).
  2. In a baking dish, layer the sliced apples.
  3. In a bowl, combine oats, brown sugar, flour, melted butter, cinnamon, and salt to make the topping.
  4. Sprinkle the topping over the apples evenly.
  5. Bake for 30-35 minutes until the apples are tender and the topping is golden brown.
