  • 1 cup pumpkin puree

  • 2 large eggs
  • 1/2 cup vegetable oil
Apple Crisp
  • 4 cups sliced apples peeled and cored
  • 1 cup brown sugar
  • 1 cup oats
  • 1/2 cup all-purpose flour
  • 1/2 cup butter melted
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg

Method
 

Pumpkin Spice Muffins
  1. Preheat the oven to 350°F (175°C). Grease a muffin tin.
  2. In a mixing bowl, combine flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, whisk together pumpkin puree, eggs, and vegetable oil.
  4. Add the wet ingredients to the dry ingredients and mix until just combined.
  5. Pour the batter into the muffin tin and bake for 20-25 minutes.
Apple Crisp
  1. Preheat the oven to 350°F (175°C).
  2. In a baking dish, layer the sliced apples.
  3. In a bowl, mix brown sugar, oats, flour, cinnamon, nutmeg, and melted butter until crumbly.
  4. Sprinkle the oat mixture over the apples.
  5. Bake for 30-35 minutes until the apples are tender and the topping is golden.
