Ingredients
  

Vegetables
  • 1 medium butternut squash peeled and diced
  • 2 medium carrots peeled and diced
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 2 stalks celery diced
  • 4 cups vegetable broth
Spices
  • 1 teaspoon ground cumin
  • 1 teaspoon ground cinnamon
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
Finishing Touches
  • 1 tablespoon olive oil for sautéing
  • 1/4 cup heavy cream optional for garnish
  • 2 tablespoons fresh parsley chopped, for garnish

Method
 

Prepare the Vegetables
  1. In a large pot, heat the olive oil over medium heat. Add the onion, garlic, carrots, and celery. Sauté until softened, about 5 minutes.
  2. Add the butternut squash, vegetable broth, cumin, cinnamon, salt, and pepper. Bring to a boil.
Cook the Soup
  1. Reduce heat and let simmer for 25 minutes, or until the squash is tender.
  2. Using an immersion blender, blend the soup until smooth. Alternatively, carefully transfer to a blender in batches.
Serve
  1. Ladle the soup into bowls and drizzle with heavy cream if desired. Garnish with fresh parsley.

Notes
