Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon salt
Wet Ingredients
  • 1 cup pumpkin puree canned or fresh
  • 1/2 cup brown sugar packed
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter softened
  • 1 large egg
  • 1 teaspoon vanilla extract
Optional Add-ins
  • 1/2 cup chocolate chips optional
  • 1/2 cup walnuts chopped, optional

Method
 

Prepare the Dough
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, whisk together the dry ingredients: flour, baking soda, cinnamon, nutmeg, ginger, and salt.
  3. In another bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  4. Add the pumpkin puree, egg, and vanilla extract to the butter mixture and mix until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in any optional add-ins like chocolate chips or walnuts.
Bake the Cookies
  1. Drop tablespoon-sized balls of dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
  2. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
  3. Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
