Clean & Prep the Mushrooms
- Preheat your oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper. Gently wipe each mushroom cap clean using a damp paper towel (never submerge them in water, which makes them soggy). Snap off the stems, finely mince about half of them, and set aside.
Sauté the Garlic and Stems
- Melt 1 tablespoon of butter in a small skillet over medium heat. Add the minced mushroom stems and minced garlic. Sauté for 3 to 4 minutes until moisture evaporates and garlic is aromatic. Remove from heat and cool for 2 minutes.
Whip the Savory Herb Filling
- In a medium mixing bowl, blend the softened cream cheese, grated Parmesan, sautéed garlic-mushroom mixture, chopped parsley, fresh thyme, onion powder, sea salt, and black pepper until completely smooth, velvety, and well-distributed.
Generously Stuff the Caps
- Lightly brush or toss the mushroom caps in olive oil, then arrange them hollow-side up on the baking sheet. Use a spoon or cookie scoop to mound the creamy herb cheese filling generously into each cavity.
Add the Crisp Panko Crown
- In a small ramekin, toss together the panko breadcrumbs, 1 tablespoon melted butter, 2 tablespoons grated parmesan, and a pinch of paprika. Press a generous pinch of the panko mixture onto the top of each stuffed mushroom.
Bake to Golden Bubbling Perfection
- Bake for 18 to 20 minutes until the mushrooms are tender and juicy, the filling is piping hot and bubbly, and the crumb topping is deeply toasted and golden brown. Let rest for 3 minutes, then garnish with fresh parsley and serve hot!

Notes
Chef's Secret: Wipe mushrooms with a damp paper towel rather than washing under a faucet. Mushrooms act like little sponges; washing them introduces excess water that releases during baking, causing watery fillings. Keeping them dry ensures perfectly juicy caps and rich, thick melted cheese.
