Ingredients
  

  • 2 pounds chicken thighs
  • 2 tablespoons Jamaican curry powder
  • 1 teaspoon allspice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 1 inch ginger grated
  • 1 large bell pepper sliced
  • 2 medium carrots sliced
  • 2 cups chicken broth
  • 2 tablespoons vegetable oil
  • 2 tablespoons fresh cilantro for garnish

Method
 

  1. Heat vegetable oil in a large pot over medium heat.
  2. Add chicken thighs and brown on all sides.
  3. Remove chicken and set aside.
  4. In the same pot, add chopped onion, minced garlic, grated ginger, sliced bell pepper, and sliced carrots. Sauté until softened.
  5. Stir in Jamaican curry powder, allspice, salt, and black pepper.
  6. Return chicken to the pot and add chicken broth.
  7. Bring to a boil, then reduce heat and simmer for 60 minutes, or until chicken is tender.
  8. Garnish with fresh cilantro before serving.
