Ingredients
  

Pasta and Eggs
  • 8 oz elbow macaroni or any pasta of choice
  • 4 large eggs hard-boiled and chopped
Dressing
  • 1/2 cup mayonnaise
  • 1 tbsp Dijon mustard
  • 1 tbsp apple cider vinegar
  • 1/4 tsp salt to taste
  • 1/4 tsp black pepper to taste
  • 1/4 tsp paprika plus more for garnish
Vegetables
  • 1/2 cup celery finely chopped
  • 1/4 cup red onion finely chopped
  • 1/4 cup sweet pickle relish

Method
 

Prepare the Pasta
  1. Cook the elbow macaroni according to package instructions. Drain and rinse under cold water.
Make the Dressing
  1. In a mixing bowl, whisk together mayonnaise, Dijon mustard, apple cider vinegar, salt, black pepper, and paprika until smooth.
Combine Ingredients
  1. In a large bowl, combine the cooked pasta, chopped hard-boiled eggs, celery, red onion, and sweet pickle relish.
  2. Pour the dressing over the pasta mixture and gently fold until everything is well coated.
Chill and Serve
  1. Cover and refrigerate for at least 30 minutes before serving to allow flavors to meld. Garnish with additional paprika if desired.
