  • 4 medium Yukon Gold potatoes peeled and sliced
  • 4 tbsp unsalted butter divided
  • 2 tsp fresh rosemary leaves
  • 3 cloves garlic minced
  • 1 cup low-sodium chicken or vegetable broth
  • Salt to taste
  • Pepper to taste

Method
 

  1. Preheat your oven to 400°F (200°C).
  2. Melt 2 tablespoons of butter in a baking dish.
  3. Sauté minced garlic in a small pan with a splash of olive oil until fragrant (about 1 minute).
  4. Peel and slice the potatoes into thick rounds; place them in the baking dish with melted butter and sautéed garlic.
