Ingredients
  

Nut Butter Energy Bites
  • 1 cup rolled oats
  • 1/2 cup natural nut butter almond or peanut
  • 1/4 cup honey or maple syrup
  • 1/4 cup chocolate chips dairy-free
  • 1/4 cup flaxseed meal
Veggie Hummus
  • 1 can chickpeas drained and rinsed
  • 1/4 cup tahini
  • 2 tablespoons olive oil
  • 1 clove garlic minced
  • 1 lemon juice freshly squeezed
  • 1/2 teaspoon cumin
  • to taste salt
Fruit and Nut Bars
  • 1 cup dates pitted
  • 1/2 cup mixed nuts chopped
  • 1/4 cup coconut flakes unsweetened
  • 1/4 cup pumpkin seeds

Method
 

Nut Butter Energy Bites
  1. In a mixing bowl, combine rolled oats, nut butter, honey or maple syrup, chocolate chips, and flaxseed meal.
  2. Mix until well combined and form into small balls.
  3. Place on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes.
Veggie Hummus
  1. In a blender, combine chickpeas, tahini, olive oil, garlic, lemon juice, cumin, and salt.
  2. Blend until smooth, adding water as needed to reach desired consistency.
  3. Serve with fresh vegetables or pita chips.
Fruit and Nut Bars
  1. In a food processor, blend dates until they form a sticky paste.
  2. Add mixed nuts, coconut flakes, and pumpkin seeds, and pulse until combined.
  3. Press the mixture into a lined baking dish and refrigerate until firm, then cut into bars.
