Ingredients
  

Main Ingredients
  • 1 lb boneless, skinless chicken breasts
  • 1 cup long-grain white rice rinsed
  • 4 cups chicken broth low sodium preferred
  • 1 cup frozen mixed vegetables peas, carrots, corn
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried thyme
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste

Method
 

Cooking Instructions
  1. Place the chicken breasts in the bottom of the crockpot.
  2. Add the rinsed rice on top of the chicken.
  3. Pour the chicken broth over the rice and chicken.
  4. Add the frozen mixed vegetables, garlic powder, onion powder, thyme, salt, and pepper.
  5. Stir gently to combine all ingredients.
  6. Cover and cook on low for 4-6 hours or until the chicken is cooked through and rice is tender.
  7. Once cooked, shred the chicken with two forks and stir to combine with the rice.
  8. Serve warm and enjoy!
