  • 1 lb boneless, skinless chicken breasts
  • 1 cup long-grain white rice rinsed
  • 2 cups chicken broth
  • 1 cup frozen mixed vegetables peas, carrots, corn
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste

Method
 

Preparation
  1. Place the chicken breasts at the bottom of the crockpot.
  2. Add the rinsed rice on top of the chicken.
  3. Pour the chicken broth over the rice and chicken.
  4. Add the frozen mixed vegetables, garlic powder, onion powder, thyme, salt, and pepper.
  5. Stir gently to combine the ingredients.
Cooking
  1. Cover and cook on low for 4 hours or until the chicken is cooked through and rice is tender.
  2. Once cooked, shred the chicken with two forks and stir to combine with the rice and vegetables.
