Ingredients
  

Beef
  • 2 pounds beef chuck roast cut into 1-inch cubes
Vegetables
  • 4 medium carrots sliced
  • 3 medium potatoes cubed
  • 1 large onion chopped
  • 2 cloves garlic minced
Liquids
  • 4 cups beef broth
  • 1 tablespoon Worcestershire sauce
Seasonings
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste

Method
 

Preparation
  1. In a large bowl, combine the beef cubes with salt, pepper, thyme, and rosemary.
  2. Place the beef in the crockpot.
  3. Add the chopped onions, sliced carrots, and cubed potatoes on top of the beef.
  4. Pour in the beef broth and Worcestershire sauce.
  5. Stir gently to combine all ingredients.
Cooking
  1. Cover the crockpot and cook on low for 8 hours or on high for 4 hours.
  2. Check the beef for tenderness; it should be fork-tender when done.
  3. Serve hot, garnished with fresh parsley if desired.

Notes

For thicker stew, mix 2 tablespoons of cornstarch with 2 tablespoons of cold water and stir into the stew during the last 30 minutes of cooking.
