  • 1 lb 450g halal chicken tenderloins (or chicken breast cut into strips)
  • 1 cup panko Japanese breadcrumbs
  • 1 large egg beaten with 1 tbsp water
  • 1/2 cup all-purpose flour
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • 1 tsp fine sea salt & 1/2 tsp black pepper
  • 2 tbsp extra virgin olive oil or avocado oil spray for air frying
Creamy Garlic Caesar Dressing (100% Halal)
  • 1/2 cup whole-milk plain Greek yogurt or high-quality mayonnaise
  • 1/4 cup freshly grated Parmigiano-Reggiano cheese
  • 2 tbsp extra virgin olive oil
  • 1.5 tbsp freshly squeezed lemon juice
  • 1 tbsp Dijon mustard
  • 2 cloves fresh garlic grated or finely minced
  • 1/4 tsp Worcestershire sauce halal / anchovy-free certified
  • Pinch of sea salt and fresh cracked black pepper to taste
Wrap Assembly & Greens
  • 4 large 10-inch burrito-style flour tortillas (or spinach herb wraps)
  • 3 cups crisp romaine hearts washed, thoroughly dried, and chopped
  • 1/2 cup shaved parmesan cheese flakes
  • 1/2 cup seasoned garlic sourdough croutons lightly crushed for texture

Method

Step-by-Step Preparation
  1. Prepare the crispy chicken: Pat chicken tenders completely dry. Set up a breading station: Flour mixed with paprika, garlic powder, salt, and pepper in dish 1; beaten egg in dish 2; panko breadcrumbs in dish 3. Dredge tenders in flour, dip in egg, and press firmly into panko until completely coated.
  2. Cook until ultra-crunchy: Heat olive oil in a large skillet over medium-high heat. Cook tenders for 4 to 5 minutes per side until deeply golden and cooked through to 165°F (74°C). Alternatively, air-fry at 400°F (200°C) for 10 to 12 minutes, flipping halfway. Transfer to a cutting board and slice into bite-sized strips.
  3. Whisk the creamy caesar dressing: In a medium bowl, whisk together Greek yogurt, grated parmesan, olive oil, lemon juice, Dijon mustard, minced garlic, Worcestershire sauce, salt, and pepper until thick, creamy, and velvety smooth.
  4. Toss the caesar salad filling: In a large mixing bowl, combine chopped crisp romaine lettuce, lightly crushed garlic croutons, shaved parmesan flakes, and 3 tablespoons of the prepared dressing. Toss until the greens are lightly coated.
  5. Warm and fill tortillas: Warm the flour tortillas in a dry skillet or microwave for 15 seconds to make them pliable. Spread 1 tablespoon of dressing down the center of each tortilla. Layer a generous handful of tossed Caesar greens and top with hot sliced crispy chicken tenders.
  6. Roll and toast seam: Fold the sides of the tortilla inward over the filling, then tightly roll from the bottom up like a burrito. Place the wraps seam-side down in a lightly oiled hot skillet over medium heat for 1 to 2 minutes until golden and crisp. This seals the wrap shut so it never unravels! Slice in half diagonally and serve immediately.

Chef Pro Tip: Lightly crushing seasoned garlic sourdough croutons right into the romaine greens ensures you get that iconic Caesar salad crunch in every single bite without big, awkward crouton pieces tearing the tortilla!
