Chicken
  • 2 thighs boneless, skinless chicken
  • 1 cup buttermilk
  • 1 tsp hot sauce
  • 1 cup all-purpose flour
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • Salt and pepper to taste
  • Neutral oil for frying
Sandwich Assembly
  • 1.5 cups shredded romaine
  • 0.25 cup Caesar dressing
  • 2 tbsp grated Parmesan
  • Fresh cracked black pepper
  • Squeeze of lemon
  • 2 large buttery croissants
  • Shaved Parmesan
  • 1 tbsp butter
  • Extra Caesar dressing for drizzling

Method
 

Preparation
  1. Soak the chicken thighs in buttermilk and hot sauce for at least 30 minutes.
  2. In a bowl, mix together the flour, garlic powder, onion powder, paprika, salt, and pepper.
  3. Remove chicken from the buttermilk mixture and coat each thigh in the flour mixture.
  4. Heat neutral oil in a frying pan over medium heat and fry the coated chicken until golden brown and crispy, about 5-7 minutes per side.
  5. Remove the chicken from the pan and place on a paper towel to drain excess oil.
Assembling the Sandwich
  1. To assemble the sandwich, slice the croissants in half and layer shredded romaine, crispy chicken, Caesar dressing, grated Parmesan, fresh cracked black pepper, and a squeeze of lemon.
  2. Top with shaved Parmesan and drizzle with extra Caesar dressing before closing the sandwich.
