Method
Mix the Honey Dijon Spread
- In a small bowl, whisk together the mayonnaise, Dijon mustard, pure honey, apple cider vinegar, and garlic powder until smooth and creamy. Set aside.
Butter Bread & Layer Sandwiches
- Spread softened salted butter evenly on one side of each sourdough bread slice (these buttered sides will face outward toward the skillet). Flip 4 slices over so the unbuttered sides face up on your board. Spread 1 generous tablespoon of honey Dijon sauce across each slice.
Stack the Fillings
- Layer one slice of sharp white cheddar on each sandwich, followed by warm sliced chicken breast, thinly sliced crisp apples, a handful of fresh arugula, and a second slice of white cheddar (cheese on top and bottom acts as adhesive glue!). Top with the remaining bread slices, buttered side facing outward.
Pan-Sear to Crispy Golden Melt
- Heat a large cast-iron skillet or nonstick griddle over medium-low heat. Place sandwiches in the skillet, cover loosely with a lid to trap steam, and grill for 3 to 4 minutes until bottoms are deeply golden brown and crunchy. Flip carefully with a wide spatula and cook for another 3 to 4 minutes until cheese is completely melted and bubbly.
Slice and Serve Hot
- Transfer to a cutting board, let rest for 1 minute so cheese settles slightly, then slice diagonally in half. Serve immediately while hot and crisp!

Notes
Chef's Pro Tip: The cheese barrier technique is key! Placing cheese both directly beneath the chicken and right over the apples creates a protective thermal seal that binds all ingredients together when melted and stops the bread from getting soggy from warm apple juices. Cook over medium-low heat with a lid on to ensure the cheddar melts thoroughly before the sourdough gets too dark.
