Ingredients
  

Base Ingredients
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 pound ground beef can substitute with turkey or chicken
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 2 cups beef broth
  • 1 packet taco seasoning
  • 1 cup heavy cream
Toppings
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1 cup sour cream
  • 1 cup tortilla chips for serving
  • 1 medium avocado, diced
  • 1 tablespoon cilantro, chopped for garnish

Method
 

Cooking the Soup
  1. In a large pot, heat olive oil over medium heat. Add diced onion and cook until translucent, about 5 minutes.
  2. Add minced garlic and cook for an additional minute until fragrant.
  3. Add ground beef to the pot and cook until browned, breaking it apart with a wooden spoon.
  4. Stir in black beans, corn, diced tomatoes, beef broth, and taco seasoning. Bring to a simmer.
  5. Reduce heat and stir in heavy cream. Allow to simmer for another 10 minutes.
Serving
  1. Ladle the soup into bowls and top with shredded cheese, sour cream, diced avocado, cilantro, and tortilla chips.
