  • 1 lb ground beef or turkey
  • 1 can black beans drained and rinsed
  • 1 can corn drained
  • 1 can diced tomatoes with green chilies
  • 1 packet taco seasoning
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheese cheddar or Mexican blend
  • 1 cup sour cream for serving
  • 1 cup chopped cilantro for garnish

Method
 

Cooking the Soup
  1. In a large pot, brown the ground beef over medium heat until fully cooked. Drain excess fat.
  2. Add the taco seasoning and stir to coat the meat.
  3. Pour in the chicken broth, diced tomatoes, black beans, and corn. Stir to combine.
  4. Bring the mixture to a boil, then reduce heat and let simmer for 20 minutes.
  5. Stir in the heavy cream and shredded cheese until melted and well combined.
  6. Serve hot, topped with sour cream and cilantro.
