Ingredients
  

Buttery Graham Cracker Crust
  • 1.5 cups graham cracker crumbs about 11 to 12 whole sheets, finely pulsed
  • 1/3 cup dark brown sugar packed
  • 1/2 tsp ground cinnamon
  • 6 tbsp unsalted butter melted and slightly cooled
Cheesecake Batter Base
  • 16 oz full-fat brick cream cheese softened to room temperature, 2 packages
  • 1/2 cup granulated sugar
  • 1/4 cup dark brown sugar
  • 1/3 cup full-fat sour cream room temperature
  • 2 large eggs room temperature
  • 1.5 tsp pure vanilla bean paste or vanilla extract
Spiced Pumpkin Swirl Layer
  • 3/4 cup 100% pure pumpkin purée not pumpkin pie mix
  • 1.5 tsp ground cinnamon
  • 1/2 tsp ground nutmeg freshly grated
  • 1/2 tsp ground ginger
  • 1/4 tsp ground cloves
  • 1 tbsp all-purpose flour
Whipped Cream Topping (Optional)
  • 1 cup heavy whipping cream chilled
  • 2 tbsp powdered confectioners sugar
  • 1/2 tsp pure vanilla extract
  • 16 toasted pecan halves for garnish

Method
 

Bake the Crust
  1. Preheat oven to 325°F (165°C). Line a 9x9-inch square baking pan with parchment paper, leaving an overhang on the sides for easy lifting.
  2. In a medium bowl, combine graham cracker crumbs, brown sugar, cinnamon, and melted butter until the mixture resembles wet sand.
  3. Press the crumb mixture firmly and evenly into the bottom of the prepared pan using the flat bottom of a measuring cup. Bake at 325°F for 10 minutes, then remove and set aside to cool while making the filling.
Prepare the Cream Cheese & Pumpkin Fillings
  1. In a large stand mixer or with a hand mixer on medium-low speed, beat the softened cream cheese, granulated sugar, and brown sugar until completely smooth, creamy, and lump-free (about 2 minutes).
  2. Beat in the sour cream and vanilla extract. Add the eggs one at a time, mixing on low speed just until each egg is incorporated. Do not overmix on high speed to avoid whipping air into the cheesecake.
  3. Reserve 1/2 cup of the plain cream cheese batter in a small bowl. Into the remaining main batter, add the pure pumpkin purée, cinnamon, nutmeg, ginger, cloves, and 1 tablespoon flour. Whisk until silky and uniform.
Marble, Bake & Chill
  1. Pour the spiced pumpkin batter over the pre-baked graham cracker crust and smooth the surface. Dollop spoonfuls of the reserved plain cream cheese batter across the top.
  2. Run a thin wooden skewer or the tip of a butter knife through the dollops in gentle figure-eight motions to create an elegant marbled swirl.
  3. Bake at 325°F (165°C) for 32 to 38 minutes, until the edges are set and lightly puffed, while the very center has a gentle, subtle jiggle.
  4. Turn off the oven, prop the oven door open with a wooden spoon, and let the cheesecake cool inside the oven for 30 minutes to prevent surface cracking.
  5. Transfer pan to a cooling rack to cool to room temperature, then cover and refrigerate for at least 4 hours (or overnight) until completely chilled and firm.
  6. Use parchment handles to lift the cheesecake block onto a cutting board. Slice into 16 clean squares using a sharp knife wiped clean between cuts. Pipe dollops of fresh vanilla whipped cream and top with toasted pecans before serving.
